This is a Christmas tradition in our house. We make them as favors for neighbors, family and guests. It is basically caramel pop corn.
PreHeat oven to 200 Deg F. Melt the butter over low heat and stir in the brown sugar and the honey. Bring the mixture to a boil stirring constantly and hold it for 5 minutes. Remove the mixture from the heat and let cool for 5 minutes. While the mixture is cooling pop the popcorn and seperate any unpopped kernals. Pour the popcorn into a large bowl and add the peanuts. Then add the vanilla to the sugar and butter mixture and then pour over the popcorn and peanuts. Stir until the popcorn is well coated and spread out onto a sheet pan. (at least a quarter sheet) Bake at 200 Deg F for 1 hour stirring every 15 minutes.
