Few ingredients and big flavors makes this a great dish!
Preheat oven to 350 degrees F.
In a large skillet, heat the olive oil over medium heat. Add the mushrooms, garlic, thyme, salt, pepper and cook, stirring, until the mushrooms are browned...about 10 minutes.
In a large bowl, whish the eggs and milk together, add 2 tablespoons parmesan cheese, and a pinch of salt. Stir in the bread cubes and let soak for 10 minutes. Stir in the mushrooms mixture and the mozzarella. Transfer to a greased 1 1/2 quart baking dish and sprinkle the remaining 2 tablespoons parmesan cheese on top of the dish. Bake until golden brown, about 45 minutes. Let stand 15 minutes before serving.
Great side dish to add to any dinner. The rest time after removing it from the oven allows you to finish the main course while this sets up. Also a great item to pre-prep, and cook between the creation of other side dishes.
