Slow Cooker Comfort Food made with rice, broccoli, ham, cheese spread, shallots and scallions...

"Developed and made this last night using the basics of another recipe (Casserole in The Cooker) on Big Oven. Came out really well, the whole family ate it (VERY unusual around here…). I would describe it as comfort food… very filling and downright close to being HEALTHY!"

Ingredients

Are you making this? 
2 - 2 1/2 pounds Broccoli; fresh
3 pounds low fat Cooked ham; cubed
1 can Heart Healthy cream of mushroom soup; standard size
1 can Heart Healthy cream of celery soup; standard size
15 ounce Cheese Wiz; jar
5 ounce Old English cheddar cheese spread; jar
2 1/2 cups soy milk; NOT vanilla
2 cups instant brown rice; uncooked
4 medium Shallots; chopped
1 small bunch (5 or 6) Scallions; chopped

Original recipe makes 10 Servings

Preparation

In a large crock pot, combine the broccoli and ham. In a mixing bowl, combine the cheese products, soups, scallions, shallots, soy milk, and brown rice then pour into crock pot and mix with the ham and veggies. Cover. Cook on low for 4 1/2 hours or until the rice is tender.

Notes

Feel free to use your hands to do the mixing. I liken it to making a meatloaf...
