In a large crock pot, combine the broccoli and ham. In a mixing bowl, combine the cheese products, soups, scallions, shallots, soy milk, and brown rice then pour into crock pot and mix with the ham and veggies. Cover. Cook on low for 4 1/2 hours or until the rice is tender.
