It is a delicious side dish or just as easily a perfect main dish that is great for any one that is trying to eat less meats or is a vegetarian!

I used the recipe from the link above as the basis for my own original creation. So I give a lot of credit for my creation to the person who posted his/her own recipe on BigOven.com to help inspire me.
Melt all butter in large sauce pan. Add one cup of Zucchini and all slices of Onion.
Add powdered garlic.
Cook until both Zucchini and Onion slices are slightly tender.
Stir in Flour until all butter has moistened all flour.
Add Milk and all remaining seasonings including sugar while stirring.
Keep stirring with medium heat till the mixture thickens into a paste.
Remove from heat and stir in Shredded Mozzarella & Cheddar Cheese
This will look like a paste.
Preheat Oven at 350 before you continue.
Now in a large glass baking pan grease the bottom.
Take a spoon and spatula and layer the paste on the bottom of the baking pan.
Then take the remaining zucchini slices and the mushroom slices and layer them on top of the layer of paste.
Once you have topped the layer of paste with one layer of zucchini and mushroom slices sprinkle with shredded mozzarella
Then layer on top another thin layer of paste.
And top the paste with one layer of
zucchini and mushroom slices sprinkle with shredded mozzarella
Repeat these layers as many times as desired.
Put the fully prepped Danielle's Cheesy Vegetable Medley UNCOVERED in the oven for 50 minutes. After 50 minutes check to see if done. If not continue to bake for 20 minutes.
Once vegetables are cooked sprinkle light layer of Mozzarella cheese on top and put in the oven to melt cheese.
Then Danielle's Cheesy Vegetable Medley is done!
