PREHEAT OVEN TO 350 -- 10" Deep-Dish Pie Pan
In a food processor, combine the flour, salt, cinnamon and butter. Process until only pea-sized chunks remain. While processor is running on low, add 1 Tablespoon of ice water at a time. Add water until dough forms a smooth ball (may need to increase speed).
Using a silicone mat and a sheet of waxed paper (or 2 sheets of waxed paper), roll out dough to fit in your 10" deep dish pie pan. Carefully fit rolled dough into pie pan, trimming edges to 1/2" beyond the edge.
For the filling, in a medium bowl combine the sugar, flour and cinnamon. Cover the bottom of the prepare pie crust with 3 Tablespoons of the cinnamon and sugar mixture. Peel, core and slice the apples, layering them in the pie pan. After every 2-3 apples, sprinkle well with the cinnamon and sugar. Repeat until all the apples have been added. Sprinkle the top with the remaining cinnamon and sugar.
Roll out the second pie crust. Carefully lay over the to of the pie, crimping the bottom and top crust together. Slice 2 air vents in the top of the pie. Slowly and carefully, pour 1/2 cup heavy cream through the air vents (place a funnel into the slit and pour, if necessary).
Brush the entire outer crust with heavy cream and sprinkle with sugar. Place pie on a large rimmed baking sheet. Bake for 90 minutes or until the crust is golden and the apples are tender. Allow the pie to cool completely before serving.
