This curry is not too spicy but full of lovely flavours.
Preparations:
Chop the onions into small pieces
Finely chop or crush the cloves of garlic
Grate the Ginger
Cut the chicken pieces into bite-size chunks, wash and leave to drain
Thickly sliced peppers
Cooking instructions:
Heat the oil or ghee (Indian clarified butter) in a deep nonstick pan, over a medium heat until hot
Add the cloves and the cardamom pods so that they sizzle
Add the chopped onions and fry for approximately 3 minutes
Add the garlic and continue frying for a further 2 minutes.
Add the chicken pieces, the generic, the chilli powder, and the amchoor. Fry for about 5 minutes, stirring frequently. Do not allow chicken to stick.
Add the cubed eggplant and the coconut milk (or chicken stock as an alternative), bring to the boil, reduce heat to simmer and cover. Cook for 10 to 15 minutes.
Undercover the pan and continue to simmer, watching closely, reducing water content to desired consistency. If you''''re using chicken stock you may wish to add some cornflour to help thicken the juice.
Add the ginger, ground coriander, two men, peppers, human seeds and stir well in. Cover and simmer for a final 5 minutes.
When you serve sprinkled the carry with the garam masala powder. You can also sprinkled with a few chopped coriander leaves
Serve with rice (Basmati), Naan bread, veg curry or daal.
