Your meat eating friends will not believe this is a vegan recipe. It is delicious!
Preheat oven to 350°.
Drain tofu and crush by hand. Add to a mixing bowl with basil, garlic and salt. Mix together.
Coat the bottom of a 13 x 9 baking dish with Vegan Marinara Sauce and line with a layer of pasta.
Cover the pasta with more sauce, then spread a layer of 1/2 of the tofu mixture.
Sprinkle with 1/3 of the soy cheese.
Repeat the layers of pasta, sauce, tofu and cheese. Finish with a layer of pasta, sauce and cheese.
Cover with a piece of parchment or wax paper and then with a layer of foil. (The parchment will prevent the soy cheese from sticking to the foil.)
Bake in preheated oven for 40 minutes. Remove foil and parchment and bake until cheese is lightly browned, about 10 minutes.
To serve, ladle some sauce into a plate and place a portion of lasagna on it.
