In the mood for comfort food, but don't have a lot of time? Here is a quick and easy way to go. For the chicken, I used a rotisserie chicken from the grocery store. You can save the excess for another recipe or double this one and use most of the meat.
After chopping the onions, carrots and celery add them to a dutch oven with the 3 tablespoons of butter. Saute for 5 to 7 minutes or until onions and celery are translucent. Add remaining ingredients and bring to a boil, reduce heat and simmer for 20 to 25 minutes. Serve with crackers or on a bed of mashed potatoes.
