Suggest a better descriptionSaute onion, green pepper & garlic in oil. Add hamburger & brown, adding salt & pepper to taste and 1 bay leaf if desired. Add tomatoes & tomato paste & simmer about 1 hour. Peel & slice eggplant. Salt, pepper & flour each slice. Brown in oil in a separate skillet. In a casserole, pladce layer of eggplant & cover with some of the sauce, then add a layer of Mozzarella. Repeat these layers again & top with grated Parmesan. Bake at 350 for 45 minutes. MRS C.J.
