1 lb Ground beef
1/2 cup Onion; chopped
1/2 cup Bell pepper; chopped
1 14.5-oz can Diced Tomatoes; undrained
1 can (8 oz) Tomato sauce
1/2 teaspoon Dried basil; crumbled
1/2 teaspoon Dried Oregano; crumbled
1 clove Garlic; minced
1 1/2 teaspoon Salt
1/4 teaspoon Pepper
8 ounce Pasta; drained
2 cups Mozzarella Cheese; shredded

Original recipe makes 8



Saute ground beef, onions and green peppers until onions are clear and ground beef is browned. Drain Grease.

Add tomatoes, tomato sauce, basil, oregano, garlic, salt, pepper, and Pasta to beef mixture. Add 1 cup cheese and heat until everything starts to bubble.

Place everything in a 2 1/2 quart casserole dish.

Sprinkle the other cup of cheese on top and bake at 350° for 25 - 30 minutes.

Nice, versatile dish that uses ingredients almost everyone has on hand and comes together pretty quickly. I subbed fresh cherry tomatoes in place of the canned, added a bit of dried rosemary, used the whole box of penne, added a can of tomato paste with a little water, and used Monterey Jack and Parmesan with the mozzarella cheese. I didn't use as much, but it came out great, especially the tomatoes! I will definitely be making this again!

I used red peppers instead of the green and everyone loved it. Huge hit with all my roommates, it is now a regular part of our movie night get togethers!
