Fishmonger's Seafood Restuarant in Plano, Texas has delighted patrons for several decades. One of it's most requested items is bread pudding. This recipe appeared in the Dallas Morning News in 1987.
Preheat oven to 350 degrees F. Tear bread into bite sized peaces (4 - 5 cups). Place bread into large mixing bowl and add milk. Set aside and allow bread to absorb milk.
When milk has been absorbed, add sugar, vanilla, raisins, pineapple and eggs. Stir gently until thoroughly incorporated. Pour into a well buttered 9x12 baking dish. Bake until golden brown on top and crusty on edges (about 45 to 55 minutes).
Serve warm with whiskey sauce:
In a small saucepan combine stick of butter (1/2 cup), 1 cup sugar, 1/2 teaspoon cinnamon and juice of 1/2 lemon. Stir over low heat until butter melts and sugar dissolves. Remove from heat. Stir in 1/2 teaspoon vanilla and 2 tablespoons bourbon whiskey. Serve warm.
Use a quality (price) bourbon whiskey. Jack Daniels is NOT bourbon. Adjust amount of bourbon to your own tastes.
