Floating Islands from Princess Cruises
For Meringues:
Fill a large pot half full of water and bring to a boil.
Meanwhile, beat egg whites and salt until they form soft peaks. Slowly add sugar and continue beating until stiff peaks form.
Reduce boiling water to a simmer. Scoop large spoonfuls of meringue and ease into simmering water. Poach for about 2 minutes, turn over using slotted spoon and poach on the other side for about 4 minutes. Remove from water, drain on paper towels and set aside.
For Vanilla Anglaise:
Add cream and vanilla bean to a saucepan. Bring to a boil.
In a separate bowl, mix the sugar and egg yolks. Remove vanilla bean and slowly pour the cream into the egg mixture, stirring constantly to prevent the eggs from cooking.
Place over a simmering water bath and stir until mixture is thickened and coats the back of a spoon. Strain mixture into a bowl and place the bowl over an ice bath to chill thoroughly.
For lightly toasted almonds:
Place sliced almonds onto a cookie sheet and bake in a moderate oven at around 325 degrees Fahrenheit for 3 to 5 minutes or until lightly browned. Remove from the oven as soon as almonds are slightly colored to prevent over browning and transfer to a cool tray.
To serve:
Ladle Anglaise into shallow bowl (add a few drops of cream if too thick), place meringue drops on top and drizzle caramel sauce over all. Sprinkle toasted almonds over top and garnish with a mint leaf.
