This syrupy fresh jam is the quintessential banana-split topping, and it's not bad on a peanut butter sandwich, either.
In a medium saucepan, combine strawberries and sugar. Stir over low heat until sugar is dissolved and strawberries have released their juices, about 8 minutes. Lower heat and simmer, uncovered, stirring occasionally, until strawberries have broken down and mixture has thickened to a loose, jam-like consistency, about 30 minutes. Stir in lemon juice.
Serve the topping chilled or at room temperature. Tightly covered, it will keep several weeks in the refrigerator.
