Method for roasted garlic:
Preheat oven to 400? F. Cut each head of garlic in half with a sharp knife. Place a half garlic head, cut-side up, on a small sheet of aluminum foil (about 10-inch square). With a slightly damp pastry brush, brush exposed cloves with olive oil. Season with salt and pepper. Pull the edges of the foil up and crimp tightly to form a small package. Repeat with remaining halves. Place packages on a baking sheet and bake until flesh is soft, about 45 minutes. Squeeze garlic out of skin, one clove at a time, and reserve.
Ingredients for chicken:
1 (3-pound) broiler chicken
1/4 lb butter
1/4 cup chopped basil
1/4 cup chopped thyme
1/4 chopped sage
1 tbsp chopped tarragon
1/2 cup reserved roasted garlic, mashed
salt and cracked black pepper to taste
4 sage leaves
dash of Louisiana hot sauce
8 garlic cloves
Method for chicken:
Preheat oven to 375 ? F. Soften butter to room temperature and place in a large mixing bowl. Add basil, thyme, chopped sage, tarragon and mashed roasted garlic. Whisk until blended. Generously season inside cavity of chicken with salt and pepper. Rub garlic and herb butter over chicken. Gently lift skin of breast and place a generous amount of herb butter under skin. Place 2 sage leaves under skin on each side of breast. Season with salt and pepper. Add dash of hot sauce. Tie legs together to keep them in place during cooking process. Place birds in a large roaster pan ,add garlic cloves, cover and bake 45 minutes to 1 hour. Uncover and brown 15 minutes. Remove, place on a serving platter and let rest 15-20 minutes prior to carving. Garnish with garlic cloves and fresh herbs. Serve with fresh French bread.
