Suggest a better descriptionPlace potatoes in a large sauce pan, cover with water, bring to a boil
Simmer for 15-20 minutes or until tender
Drain water from pan
Return potatoes to pan and over very low heat stir potatoes for 1-2 minutes to evaporate remaining water.
Press through potato ricer or strainer into bowl
Cool slightly
Using a fork, make a well in the potatoes; sprinkle with all of flour
Whisk the egg, salt and pepper; pour in the well
Stir until blended
On floured surface knead 10-12 times (if making multiple batches, divide dough for easier handling)
Divide dough into four portions
Roll each portion into 1/2 inch thick ropes
cut into 3/4 inch pieces
In dutch oven bring water to a boil
cook the gnocchi in batches for 30-60 seconds or until they float
