Scrumptious pop-in-your-mouth bon-bons that bring the joys of peanut butter and chocolate.
• Cream butter, cream cheese, peanut butter, and vanilla together until thoroughly incorporated. Add in powdered sugar slowly. Mixture will look like crumbs and feel like paste. Form mixture into 1 inch balls, place on a wax papered sheet pan, and freeze for at least 30 minutes.
• While peanut butter balls are freezing and there is about 10 minutes left, melt chocolate by double boiler method, stirring until smooth. Make sure not to get any water into chocolate. DO NOT microwave chocolate, it will effect consistency of chocolate and end result.
• Make an assembly line for balls to be dipped, placed on a plate or tray, and then easily put back into freezer. With a toothpick, skewer or whatever your preferred tool, dip balls one at a time into chocolate leaving top quarter bare. Place on tray with wax paper or in paper candy cups. If balls start to soften put back into freezer until firm. If chocolate starts to stiffen put warm back up over hot water bath.
• Oil fingertips and gently press hole where the tooth pick was back together to look nice. Finished buckeyes need to be chilled to properly set. One option is to storage and freeze until needed or refrigerate. This is a great make ahead candy as you can freeze for a couple of months before you plan on serving them; like making in September and freezing to serve for a Christmas party.
If you want to leave out the cream cheese, there is no needed adjustment but the taste will be altered tremendously.
