Add melted butter and oil
Add flavorings
Mix flour and baking powder
Mix dry ingredients in slowly and beat until very well mixed.
As you make the cookies, place on a cold hard surface immediately too cool quickly.
Once crisp, place in tin with wax paper cushioning.
Cookies should be as thin as possible.
How much flour you use will vary depending upon your chosen flour- the northern flour only needs 7 cups, but I have found that our softer wheat flour (e.g., White Lily) requires that you add more as it absorbs the liquid more easily.. The goal is a thick, but pourable batter that will thin out into a thin crisp cookie. It is best to test the batter. The full flavor of the cookie doesn't develop until it is crisp, but test because you may need to add flavorings, especially if you have to add up to 8 cups of flour.
