Takes some time but it is worth it.
Cover medium size mixing bowl with cheesecloth and fix it in some manner so it will hold the weight of the yogurt without falling into the bowl. Empty the container of yogurt onto the cheesecloth and spread it out until it reaches the edge of the bowl. Cover with plastic wrap and place bowl on a dinner plate lined with at least 4 doubled paper towels. Place in the fridge for at least 24 hours but no more than 48. Remove yogurt from the top of the cheesecloth with a spatula and store in a separate container. It will almost have the consistency of cream cheese but it's fat free! The perfect base for tzatziki or fresh fruit. salad.
