2. Heat oil in a 12" heavy skillet over medium-high heat until it shimmers, then sauté garlic, stirring, until golden, about 1 minute.
Add beans, arugula, zest, 3/4 tsp. salt and 1/4 tsp pepper and cook, tossing, until arugula is wilted, about 2 minutes.
