This is a favoriteguac recipe--not too spicy, not too salty. Just good, rich flavor. Whenever we serve it, we get asked for the ingredients.
Peel the avocados into a medium bowl and add lemon juice, onion and spices. Mash together. If desired, spread the mayo over the top of the mixture sealing to the edges of the bowl. Chill. At serving time, mix in the mayo.
Play with the combo of spices, some like more salt, some less. Same with chili powder. I occasionally mix in cilantro and tomato as well. If I don't want the mayonnaise, I seal the top with fresh cut lemons
It is not essential to chill the mixture but can help give time to set the spices.
