Sprinkle salmon on both sides with salt and pepper. Spread mustard on both sides of each fillet, then dredge in chopped herbs and press herbs onto fillets with your hands.
Heat 1 tablesppon butter in a 10-inch, ovenproof, nonstick skillet over high heat until very hot. Place salmon in skillet and cook about 1 minute per side, turning carefully to preserve herb curst. Place skillet in preheated oven and roast about 5 minutes for medium, 10 minutes or longer for well done.
If using salted butter cut back on the additional salt or omit all together.
