From my boss Tim Hill at BYU. These are Geoff's favorite rolls!
Mix yeast, teaspoon of sugar, and warm water and let proof. In a large bowl, melt the margarine in the microwave for about 45 seconds. Add the sugar and mix with a whisk. Warm the milk in the microwave for about 2 minutes, then add it to the margarine and sugar. Add salt and then the beaten eggs. Pour the yeast into this mixture.
Put 10 cups of flour into a mixer with bread dough hook attached. Add about 1/3 of the liquid, mix, then continue adding liquid until it is all mixed in. At this point you may need to add more flour to get the right bread dough consistency.
Turn the dough onto the counter, knead for 2-5 minutes, then place in an oiled bowl to let rise until double in size.
Punch down and divide dough into 4 even amounts. Roll each into a rectangle, cut once horizontally and 5 times vertically, making 12 strips. Stretch and tie each strip into a knot and place on a baking sheet. Let the knots rise again for about 30 minutes.
Bake at 350 F. for 12 minutes, or until lightly brown on the bottom. Rub margarine on the top of each roll right when it comes out of the oven.
Makes 4 dozen. These freeze well.
You can make cinnamon rolls out of one dozen. This will make 9 rolls. Bake cinnamon rolls for 20-30 minutes.
