A recipe for honey cake that uses coffee to give it a "dark" flavor.
Preheat oven to 325'F
Sift together flour, baking powder, cinnamon, and baking soda into a bowl.
In a separate bowl, cream sugar into butter
Add eggs, one at a time
Add honey in 2 batches
Add cup of triple strength coffee
Add in flour mixture and beat just until combined (do not overbeat)
Pour batter into a greased 10" tube pan and bake at 325 for 1 hour or until cake appears to be done when you insert a toothpick and it comes out clean.
If making multiple batches, allow cake pan to cool between batches.
