Hot Smoked Salmon Potato Chips with Chipotle Lime Cream Cheese

Ingredients

Potato Chips:
2 Potatoes; (Sliced thin on mandoline)
1 Fry at 350° until golden
Chipotle Lime Cream Cheese:
1 cup Cream Cheese; (at room temperature)
3 Chipotles in adobe
1/2 Lime, juice of
2 tbsp Chives
1 tsp Salt
1 tsp Sugar
Dry Spice:
3 tbsp Salt
2 tbsp Sugar
1 tbsp Thyme, dry
3 tbsp New Mexico Chile Powder
3 tbsp Cayenne
2 tbsp Garlic Powder
1 Mix all spices together well
Garnish:
8 oz Hot Smoked Salmon
1/4 cup Red Onion; finely chopped
2 tbsp Capers
2 tbsp Chives

Preparation

Mix all the spices for the dry spice together well

After you have fried the potato chips dust with Dry Spice

Take the ingredients of the cream cheese place all in food processor and combine well

Spread Chipotle Lime Cream Cheese across chips; add smoked salmon. Garnish with red onions, capers and chives.
