My mom would make this usually with her shish kabob in summer. so good! The chocolate sauce that hardens finishes it off and loved this as a kid.
Take ice cream out of freezer to soften.
Mix pie crust ingredients together and pat into a 9" pie pan. Bake at 350 degrees for 8-10 minutes. Cool before adding ice cream.
Add softened ice cream to pie, slightly pack down and create a flattened surface for the marshmallow topping.
Refreeze.
Topping:
Turn broiler on.
Beat 3 egg whites until frothy. Add the marshmallow creme and a pinch of salt. Beat until peaks form and spread over ice cream.
Place pie under broiler and WATCH carefully. Turn/rotate often until slightly brown.
Refreeze immediately.
should yield 8-10 servings
probably best to use a ceramic or glass 9" pie dish, not metal
Elmer's Gold Brick Chocolate sauce is what my mom used for the topping but you could make your own
take out of the freezer so it has some time to soften. it will be easier to cut or use hot water and a knife.
