Boil chicken, skim scum, add lemon pepper, corriander seed, 1/2 of the cilantro. Remove chicken from bones, defat chicken broth and add the spices back to taste.Saute onion and garlic, add to chicken stock, add remaining ingrients, Either crock pot or cook for a couple hours on low.
Serve with fresh salsa, cheese, sour cream and chips.
