A Thanksgiving staple at our house.
Cube potatoes and boil till tender. Drain and mash with salt and pepper. Saute onion in 2 1/2 tablespoons of butter (for 15 servings) until soft. Add cooked onion, cilantro, grated cheese and remaining butter and combine well. Spread into a lightly buttered gratin dish or shallow casserole and place under broiler until little flecks of brown appear on the potatoes.
