I use this as a base for various Mac & Cheese recipes

"You don't need the extra 2 cups of cheese. You also add in the bread crumbs just before you put it in the oven. Add them last and mix it up in the pan before you put it in the casserole. Also sprinkle some parmesan cheese on top after you remove it from the oven. I added a LB of ground beef to the casserole and it came out delicious. "

Ingredients

1 pound elbow macaroni
4 tablespoons Butter
4 tablespoons Flour
4 cups milk
Salt and pepper; to taste
4 cups sharp Cheddar; 4 cups plus 1/2 cup, shredded
1 cup Breadcrumbs

Preparation

Cook the macaroni in boiling water for about 10 minutes until tender but still firm.

Drain well and set aside. In a deep skillet, melt the butter over medium heat. Add the flour to make a roux and cook, stirring, to remove any lumps. Pour in the milk and cook until the mixture is thick and smooth.

Season with salt and pepper. Stir in 2 cups Cheddar and continue to cook until melted. Add the cooked macaroni and stir. Transfer the mixture to a 2-quart casserole dish. Bake in a preheated 350-degree F oven for 20 minutes.

Remove the casserole from oven, top with remaining 1/2-cup cheese. Bake for an additional 5 minutes until hot and bubbly.

Excellent basic Mac-n-cheese, I made half the recipe and it came out great. Topped with 3 slices white bread, torn up and mixed with 2 tbsp melted butter, baked at 350 for .5 hour for a crunchy buttery top. Yum!

pretty basic mac and cheese nothing fancy, I put bacon in mine and used the bacon drippings instead of butter. Its good for what it is, ya know?
