The quick white sauce in this recipe makes it much easier than the old-fashioned way....and it tastes a lot like Luby's!
Cook macaroni to al dente according to package directions; drain.
Mix dry milk powder, flour, and melted butter with a whisk. Gradually add boiling water, beating constantly. Add 1/2 cup of the cheese and continue beating until smooth and creamy. Stir in macaroni, 1 cup of remaining cheese, and salt. Transfer into greased baking dish.
Cover with foil. Bake at 350 degrees for 25 minutes. Remove foil and sprinkle remaining cheese on top. Continue baking 1-2 minutes or until cheese is melted.
