toast and grind the coriander seeds, fennel seeds, cloves, fenugreek seeds and chillies
Heat the oil in a large pan add the onions and fry until the edges start to brown.
Add ginger garlic and green chillies and fry for 30 seconds.
Add the meat and fry for 5 minutes
Stir in the toms, ground spices and coconut milk, bring to the boil.
Turn the heat down and simmer for an hour until tender then rapidly boil to reduce sauce to a thick sauce that clings to the meat.
