FRom South Indian Vegetarian Cooking: An innovative and colorful stir-fry of beets, cauliflower and lima beans. Madras vegetable medley is easy to make and is a delightful accompaniment to any meal.
1. Cook frozen lima beans according to package directions, about 10 minutes. Set aside.
2. Place oil in a wok or cast-iron skillet over medium heat. When oil is hot, but not smoking, add curry leaves, cinnamon sticks, mustard seeds, and urad dal. Cover and fry until mustard seeds pop and urad dal is golden brown, about 30 seconds.
3. Add beets and lima beans together with salt and chutney powder. Blend well and cook, covered, over medium heat for a few minutes.
4. Add cauliflower and continue cooking, covered, for a few more minutes until vegetables are tender.
5. Add coconut powder and stir well.
