This is a great dish for one of those intimate dinners with that special someone. It takes a little prep but is quickly prepared.
Plan on three medallion's per person. Using a good meat mallet thin each tenderloin slice to an even 1/4 inch thickness.
In a mixing bowl combine the flour and seasonings, stir to blend well. Start heating a saute' pan over medium to medium high heat, then add your olive oil.
Coat each medallion evenly in your seasoned flour with a "Dust Thin" layer. Cook 2 to 3 minutes on both sides.
A suggestion for side dishes would be as in the picture above, sauteed mixed vegetables and garlic mashed potatoes, and for some romantic elegance serve a nice pinot grigio and yea... candles too.
