Suggest a better descriptionMix cumin, paprika, coriander, oregano, sugar and lime. Season and massage into meat. Marinate in fridge for 1 hour minimum.
To make sauce, heat oil and soften garlic for 1 min. Stir in purée, sugar, vinegar, paste and lime. Plus 2 tbsp water.
Simmer for few seconds until sugar melts. Season and set aside. Heat oven to 140C fan. Put ribs in roasting tin.
Pour in 100 ml of hot water, cover with foil and bake for 2 hours. Drain fat. Brush with sauce. Cook under grill.
