In large bowl, mix with spatula the flour, sugar, baking powder, ground almonds and salt until well blended. Mix in butter and shortening until well combined with a consistent texture. Add vanilla and tea and knead with your hands until you form a ball.
On lightly floured surface, roll dough into a log and cut into quarters. Place in refrigerator, covered, for about 30 min.
Preheat oven to 350?. Remove one piece of dough at a time and roll out flat until it is about 1/4 in thick. Use a cookie cutter to cut out shapes and place them on a baking sheet covered with parchment paper.
Bake cookings for 13-15 min or until very lightly browned on bottom. Do not overbake as this willchange the taste of the cookie. Leave cookies on baking sheet for about 2 minutes and them coat both sides in a mixture of sugar and cinnamon. Place on cooling rack to finish cooling. Makes 4 dozen cookies.
