2 c Cooked rice; (left over)
3 Eggs
1/4 ts cinnamon; Ground, or nutmeg
1/3 c Granulated sugar
1/4 ts Salt; optional
2 c milk
1/2 c Raisins
1 ts Vanilla extract

Original recipe makes 6



In microwave proof 2 quart casserole or baking dish, mix together eggs, milk, sugar and salt. Stir in rice, raisins and vanilla. Cook uncovered on High 8 to 10 minutes. Stir every 1 to 2 minutes. Sprinkle with cinnamon or nutmeg and let stand about 30 minutes, without stirring. Serve warm or cold Serves 6 to 8. Courtesy Colleen Whepley C.H.E. The flavor was very good, but it was not creamy and sl watery. I think I may have overcooked it. I will try again.

This is a very quick and easy Rice pudding...and you end up with creamy yummy flavors...I did not use raisins...was out so made it with out Will be one of my anytime favorites becasue it was so easy and quick to make
