Reduce heat to medium and add fennel and fry, stirring for 2 minutes
Add the garlic and spices and fry for a further 2 minutes.
Transfer the mixture to the bag and then wipe the pan with kitchen paper.
Heat the remaining oil in the pan.
Add the lamb and fry for 3-5 minutes until browned on all sides, working in batches.
Removed and add to bag.
Add dried figs, preserved lemons and lamb bones to the bag.
Stir honey into 185ml boiling water until dissolved and add to bag when lukewarm.
Season bag contents with salt and pepper.
Add to slow cooker and cover with lid.
Cook on LOW for 6 hours until the lamb is tender.
Use a slotted spoon to remove the lamb from the cooker. Wrap in foil and leave for 10 minutes.
Remove and discard the preserved lemons and lamb bones.
Skim excess fat from cooking liquid then add fresh figs.
Switch cooker to HIGH, recover and cook for 15 minutes until figs are tender but still retain shape.
Return the lamb and cooking juices to cooker and stir.
Add a little more salt, pepper and lemon juice.
Sprinkle coriander, lemon zest and toasted sesame seeds over the lamb and serve with flatbread.
