In a 2 cup measuring cup, combine the almond milk and vinegar, let set 2 minutes. Meanwhile, in a medium mixing bowl, combine dry ingredients, set aside. Add remaining wet ingredients to the almond milk mix. Add to dry ingredients in bowl and mix with fork until just combined. Fry on a griddle pan with butter. Top with maple syrup and devour.
