This is a great side dish or you can add 2 cups of cooked chicken and make it a meal!**
Preheat oven to 375.
If you are using plain breadcrumbs be sure to kick up the seasoning when you are sauteing the onions and mushrooms. Pasta has no flavor and neither do plain bread crumbs. Garlic salt and onion powder are always good seasonings to use.
Cook the pasta as directed, drain and set aside.
Melt 1 stick of butter. Add the chopped onions and mushrooms and cook until everything is soft. Stir in the flour, salt, pepper and whatever other seasonings you are using. This is the basis of the roux so you need to cook it for a few minutes to cook the flour taste out.
Add the chicken broth and milk and be sure to stir constantly. The sauce will tighten up. At this point add the chicken if you are making this a main meal. Check the seasonings again.
While the sauce is cooking melt the 2 tablespoons of butter in the microwave. Add the bread crumbs, mix and set aside.
Once the sauce is fully thickened and it tastes good then mix it with the pasta. Spray a 10 x 13 casserole pan with Pam and pour the mixture in. Spread out evenly and then top with the buttered breadcrumbs.
Bake for 30 minutes. Let it stand before serving.
