Suggest a better descriptionHeat olive oil over medium heat.
Add shallots & cook for 5 minutes.
Add garlic & cook for 3 more minutes until shallots are translucent.
Add tomatoes, saffron, parsley, thyme, wine, salt & pepper.
Bring to a boil.
Add mussels, stir well, then cover the pot.
Cook on medium heat for 8-10 minutes until all the mussels are opened.
With lid on, shake pot once or twice to make sure mussels don't burn.
Pour mussels &sauce into large bowl & serve hot.
