Re the blue veined cheese, use the real mccoy, Roquefort, made from sheep's milk and only from France.
1) Finely dice the garlic and scallion tips (white segments only), then mash them into the cheese with a fork.
2) Mix in the mayo and sour cream. If you use the low fat or fat free version of either, you will get a different taste, but you already knew that, right?
3) Add the juice (fresh!) and vinegar and stir.
4) Add freshly ground pepper to taste.
5) Put the dressing in the fridge overnight to get good flavor.
