Vegan "clam chowder".
01. Cover the shitakes with water and simmer untill soft.
02. Draind and chop the shitakes to the size of clams. Set aside.
03. Place potatoes in a pot and add water untill just covered.
04. Bring potatoes to a boil, then remove from heat. Do not drain.
05. In another pot, heat the Earth Balance untill melted.
06. Add the celery and onion and saute untill soft.
07. Add the spices and stir for a minute.
08. Add the flour and stir until slightly browned.
09. Add the potatoes and potato water and stir well.
10. Add the soymilk and shitakes.
11. Simmer untill hot.
