My take on nakji bokkeum
1. Wash octo on running cold
2. Rinse until dry.
3. Put in a bowl
4. Add salt and flour and mix throughly
5. Let sit for 1 minute
6. Mix sesame oil, soy sauce, fish sauce, oyster sauce, black pepper, sugar and hot chilli sauce
7. Rinse octopus to remove salt and flour on running water
8. Dry the octopus with kitchen towel
9. Heat saute pan on high heat
10. When pan is hot add the vegetable oil and immediately add the chopped garlic
11. When the garlic is aromatic (15 to 30 seconds) add the onion, carrot and the bird's eye chilli
12. Saute until the onion start to become transparent
13. Add the octopus and saute for 1 minute
14. Add the sauce mixture
15. After 10 seconds add the red bell pepper cook for another 1 to 2 minutes
16. Turn off the stove and serve
