Good Housekeeping October 1991 Casserole Cookbook
1. Preheat oven to 350°F. Dice celery and onion.
2. In 12-inch skillet over high heat, cook celery, onion, and ground beef, stirring frequently, until all pan juices evaporate and beef is well browned. Stir in taco seasoning mix and 3/4 cup water, stirring until taco mix is well blended. Stir in beans and chilies with their liquid.
3. Into shallow 2-quart casserole, spoon meat mixture. Cover and bake 30 minutes or until heated through.
4. Meanwhile, shred cheese; slice green onions; chop tomato.
5. To serve, arrange cheese, green onions, tomato, and tortilla chips on top of casserole.
