In the minds of many aficionados the high point of German bakery art is the elegant Schwarzwalder Kirschtorte. Its name comes from the cherry brandy (known as Kirsch ) made in the Black Forest region of Germany. This liqueur lends a unique flavor to the torte. If you can obtain imported kirsch, by all means do so, since American kirsch has a faint flavor of bitter almonds and is not really a perfect substitute. Use only red sour cherries for this torte, since only they have the needed tart flavor.
Assemble the springform pan, lightly coating the inside with butter and flour.
Prepare Batter:
In a double boiler, melt chocolate over barely simmering water. Set aside to cool. Cream butter, sugar, and egg yolks. Add the kirsch. With a wire whip, alternately fold in flour, baking powder, and chocolate. Beat egg whites separately and fold gently into the batter.
Bake & Layer:
Pour the batter at once into the prepared springform pan. Bake on the lower middle rack of a preheated oven at 375 degrees for 50 to 55 minutes or until a cake tester inserted in the middle comes out clean (check for doneness after 40 minutes). Cool for 10 minutes before unmolding onto a cake rack to cool thoroughly. When thoroughly cool, turn the cake bottom side up and cut into three layers using a 2-wire cake cutter (rounded top of cake will by the bottom layer of the finished cake). Place each layer on waxed paper for subsequent handling.
Fill & Decorate:
Select 16 best cherries from the cherry pie filling and topping; wash and drain these 16 cherries only.
