Peel and grate onion on the FINEST SIDE of grater. Should look like applesauce.
Mix all ingredients together in bowl.
Heat 1 inch of oil in a large cast iron frying pan on med/low heat. Wait till oil starts shimmering to add the mix. Approx. 3 minutes a side.
