Suggest a better descriptionStart by making the tikka marinade. Blend all the ingredients in the small bowl of a food processor until smooth. Transfer to a bowl and add the paneer, coating well; set aside. Blitz the tomato in the large bowl of the food processor until smooth; set aside.
Heat the oil and 30g butter in a large saucepan. Add the whole spices and cook for 10 seconds before adding the garlic and ginger. Cook gently until starting to colour. Add the blitzed tomatoes and the tomato puree, then cook over a medium heat for 20 mins until you have a thickish paste that releases some oil. Turn the heat up to medium high and brown the paste stirring regularly for around 8-10 mins until it darkens.
Add 250mil water and bring to the boil. Then pass the mixture through a sieve, pressing down on the solids with the back of a spoon; discard the solids left in the sieve and reserve the sauce.
Preheat the grill to high. Place the paneer on a foil-lined baking tray and grill for 8-10 mins until lightly charred, then turn over, spoon over any remaining marinade and grill for another 8-10 mins.
Heat the remaining 30g butter in the rinced-out pan and add the green chillies; cook for 20 seconds then add the sieved sauce, ground spices, sugar and a good pinch of salt and 4-5 tbsp water, then simmer for 2-3 mins.
Add the paneer and simmer for another 5-6 mins, then add the cream and simmer, shaking the pan for around 2-3 mins. Serve with naan bread.
