Breaded Pork Cutlet (works for any breaded, quick cooking dish, such as shrimp, chicken nuggets or strips, chicken cutlet, chicken fried steak). This method keeps crust crispy without leaving pieces in the saute pan. Crust stays on meat. If reheating do in toaster oven on reheat, or bake 12 minutes on 350.
Browning Panko crumbs: put oil in saute pan, heat on medium heat. When hot add Panko crumbs. Let cook while carefully watching to avoid burning. Doesn't take longer than 3-5 minutes. When done place in a flat bowl and add seasonings of choice and clean pan to prepare for frying meat.
Prepare meat of choice by drying completely with paper towels to avoid spattering when frying. Dip meat in egg and hold over bowl to let dripping finish. Then lay in bread crumb bowl, pressing meat into crumbs. Turn over and bread other side. Make sure meat is well covered with crumbs. Meanwhile, add butter and canola oil to saute pan (1/4 cup total to cover). Turn heat up to medium high (7 on my stove). Add meat and fry one side till brown, about 2-3 minutes or so. When brown turn meat over and fry other side, turning heat down to medium low (3-4 on my stove). Higher heat browns but heat continues to rise which is why you need to turn the heat down for the second side.
When meat is done place on paper towels to drain excess oil. Serve with noodles, sauted mushrooms, or lemon caper sauce as desired.
