Parsley Sauce

1 pt Warm milk
2 tb Chopped parsley
salt and pepper; to taste
2 tb Flour
1 tbsp butter

Original recipe makes 1



Melt butter in large skillet. Stir in flour, cook 1 minute. Pour in warm milk gradually, stirring constantly until smooth and thick. Season to taste. Stir in parsley. Makes 3/4 pint NOTES : Parsley sauce is made in the same way as "lean" mushroom sauce. It is an excellent accompaniment to Newhaven Cream.
