Pasta with breaded cauliflower
Cut cauliflower into bite size pieces.
Boil water for pasta, after it comes to a boil, cook cauliflower in water till just tender but still crispy.
Drain cauliflower
In a frying pan, with Olive Oil, toast the bread crumbs.
After bread crumbs are crunchy and brown, set aside.
In large wide frying pan, add olive oil, add cauliflower. Cook till very tender and browned.
Boil pasta at the same time. By the time pasta is done, cauliflower should be done at the same time.
Save 1 c. of pasta water.
Mix pasta and toasted cauliflower, in frying pan, add in olive oil (optional), saute. If it gets dry, add a little pasta water.
When serving, add bread crumbs and cheese.
