A Southern Favorite
For the crust:
Preheat oven to 350. Mix all of the ingredients and press into 10" pie plate. Bake for 8 minutes. Allow to cool.
For the filling:
1. Mix together 5 beaten egg yolks, the lemon/lime juice resulting from the juice from the lemon used for the grated rind (see below) and the remaining juice from limes, and the salt in a double boiler, stirring constantly until a light custard consistency forms. once heated and thickened stir in the gelatin dissolved in 1/2 cup of water and the grated rind from one lemon . Remove from heat and cool, watching carefully and stirring often until the mixture thicken further.
2. Meanwhile, in separate bowls, beat 5 egg whites with 1 cup of sugar until stiff and the heavy cream with 1/2 cup of sugar (more for sweeter filling).
3. Fold thickened custard into egg whites and, finally, add the whipped cream and mix thoroughly.
4. Mound the mixture into the pie crust and chill for several hours.
